The Escola de Bosc (Forest School) opened in 1914. Located on Montjuïc in Barcelona, the school was the result of a municipal initiative inspired by republican educational movements. Led by the pedagogue Rosa Sensat, this public, secular Catalan institution prioritised outdoor education and students’ holistic wellbeing.
Building on previous research within the framework of a commission to Campo Adentro – Inland, the Paisanaje collective explores the school’s unique approach to cooking and dining, which were integral to its educational and social agenda. Their research centres on the Collserola mountain, an eco-social hub in Barcelona that serves as the metropolitan region’s “green lung” and is home to many agro-ecological farming and shepherding initiatives. As part of their research, the collective organised a community banquet at the Torre Negra in Sant Cugat del Vallès, bringing together local stakeholders advocating for food sovereignty.
With Agápē, Paisanaje extends and applies their research to contemporary Catalan school canteens, raising awareness amongst today’s students about the impact of different consumption habits and food production chains. By mapping initiatives that could improve young people’s health, the collective highlights the importance of personal, social and environmental care.

The project has had significant impact in the educational field, through the Department of Education of the biennial, via a school programme that connects these transformative pedagogical practices, which date back over a hundred years, with those currently being implemented in various schools across the region. In this way, a recipe found in the notebooks of students from the former Escola de Bosc was recreated, in which they explained how to preserve olives with various herbs and spices. This activity involved 74 students from the Pi d'En Xandri School (Sant Cugat del Vallès) and culminated in a collective tasting at La Casa Gomis of this recipe, alongside other local foods.
Through this exercise, a pedagogical resource was developed to reflect on the value chains within the food industry, establishing a comparison between the economic remuneration received by farmers, depending on whether the food in the school canteen comes from local production or from the conventional food market, where multiple intermediaries are involved.
